Paleo Waffles to Die For
Paleo Waffles with Butter and Berries
So I bought an appliance that only cooks one thing. Yes, at first I thought I was going insane spending $60 on this gimmicky, non-stick coated griddle that just makes a squashed type of pancake. But the kids begged for it and so here it is.
I must say it’s actually pretty good! and versatile. You can even make these with some cacao powder and call them Chocolate waffles! 🙂
Ingredients:
-1.5 cups of buckwheat or tapioca flour
-3 tbsp. apple cider vinegar
-2 eggs
-1 cup almond meal
-1/4 tsp salt
-1 tbsp. organic raw honey
-1 tbsp. raw cacao powder (optional: makes chocolate batter)
-coconut oil for greasing waffle maker (about 1 tbsp.)
Toppings: berries, passionfruit, butter. Others to try: crushed nuts and seeds, coconut chips, cacao nibs, other fresh fruit.
How to:
Soak the flour overnight in 3tbsp apple cider vinegar and filtered water (about 1 cup to make a dough consistency). Leave on benchtop (NOT in fridge) and cover with a paper towel. This allows the flour to ‘activate’ and makes it much more digestible (kind of like leavening sourdough).
In the morning, turn on your waffle maker.
In a bowl, mix the soaked flour and all ingredients together to form a batter.
Once waffle maker is hot, grease it well with coconut oil. This is important so your dough doesn’t stick and makes perfect waffles every time.
Place 1 large tbsp. of batter into each waffle square. Press the waffle maker lid down and wait for it to cook until the light goes green on the appliance. There will be steam coming out, this is ok:)
Your waffles will be ready in 2-3 mins. Serve with your favourite toppings. Enjoy!
Makes about 12 waffles.
Note: please be aware that waffle makers are not a very healthy appliance to use as they are all coated in non-stick coating. Make this an occasional indulgence. I’ve not seen a stainless steel or iron waffle maker on the market unfortunately. Make sure you only use wooden utensils and avoid any scratches on the machine as this will allow more chemicals to leech from the coating.
