Choc Coconut Power Smoothie
This is such an easy and highly nutritious breakfast that I have it at least 3-4 times per week.
If you are not a chocolate lover, instead of cacao you can add berries or a good quality protein powder.
The chia seeds and nuts in this smoothie provide lots of healthy fats for energy, easy to digest fibre for digestive health and a good amount of calcium.
The coconut juice is full of electrolytes – perfect for morning hydration. The coconut flesh makes this a super filling breakfast option. Cacao is an excellent antioxidant, energy booster and needless to say chocolate need-satisfier!
Dairy free, egg free, grain/gluten free. Paleo!
Ingredients:
-1 young coconut
-2-3 tbsp. raw cacao powder
-3 tbsp. chia seeds
-1/2 cup of nuts of choice
-1/2 a large or 1 small ripe banana
How to:
The night before:
Open coconut* and pour out juice into a tall glass or bowl. Scoop out flesh and add to the juice. Add chia seeds and nuts. Leave covered in fridge overnight- this will allow the chia seeds to expand and the nuts to activate.
In the morning blend the coconut/seed/nut mix with cacao and banana. Sprinkle seeds/nuts on top or toasted coconut flakes as in the pic.
*If you don’t yet own a coconut knife, you can buy one online or in some fruit/veg shops. It’s not as scary as it looks!:)
