Bananarama Coconut Ice-cream
The weather is warming up and everyone’s licking ice cream already!
This recipe is a perfect dairy and sugar free ice-cream alternative and tastes creamy and delicious.
Inspired by a mum who attended one of the Kids Snacks and Treats workshops (thanks Paulette!), this takes 5 mins to make – for many moments of frozen pleasures. Do try this at home and your kids will think you are the best mum ever!
Ingredients:
-1 x 400g can of coconut milk (find a brand in your local health food shop that contains nothing but coconut milk, no gums, no additives)
-3 ripe bananas
-1 cup activated nut flour (I used a mix of almond and walnut)
-1 tbsp. maple syrup (optional)
How to:
Blend all ingredients in a food processor, pour into popsicle moulds and freeze.
That’s it! Easy.

Ayam coconut cream has no guar gum. There is also a beautiful organic coconut milk in a dark turquoise tin that is pure, I wish I could remember the name. I buy it from Dr Earth in Newtown or Bondi Junction, but it may be sold elsewhere too.
I didn’t worry about the small amount of guar gum in other brands until I started trying to avoid all bean products for gut healing. The pure stuff is crucial for coconut lattes too since guar gum gives it a weird flavour when you microfoam the coconut milk.
Absolutely! banana choc would be a great flavour. I would add 2-3 tbsp. to the quantities above.
Also berries would work very well instead of banana, 2-3 cups. Depending on your taste, the berry version may need a bit of maple syrup (2-3 tbsp.)
