Addictive Sweet Potato Chips
Warning! These are seriously addictive and if made right, are so super crispy and delicious you will never want to have regular potato chips (dipped in oxidised vegetable oil) instead.
Sweet potato is a great source of fibre and carbohydrate in a primal diet and is especially recommended after a workout. It’s also a great grain free source of usable carbs for kids.
Don’t bother peeling organic sweet potatoes- there is a lot of nutrition in the skin (peel them if not organic).
If you are trying to lose weight, watch quantity as sweet potato is high in carbs.
Ingredients:
-Sweet potato, sliced into thick strips (about 1 cubed centimetre is best size for baking to a crispy consistency): 1 large or 2 medium
-Duck fat: this is the best kind of fat for roasting vegies. You can also use coconut oil or tallow from your bone broth making: 2 tbsp.
-Sea salt to taste
-Spices of choice: I use turmeric and thyme, dill or parsley.
How to:
Preheat oven to 200C.
-Slice sweet potato into strips and place in shallow mixing bowl
-Add duck fat or coconut oil and stir through the chips to coat them well
-Lay out in single layer on baking tray
-Sprinkle with spices and salt
Bake at 200C for about 30-40mins until crispy and cooked but not blackened.
Serve with mayo (my recipe here) or tahini and lemon dipping sauce.
