4 Ingredient Super Cookies
These are a firm favourite in our household because:
1) They take 5 mins to throw together
2) Are delicious, filling and nutrient dense with only wholefood ingredients- readily available year round
3) Gluten, dairy and egg free
4) Get the thumbs up from the kids every time (including their sugar addicted friends:)
Ingredients:
-3-4 ripe bananas
-2 cups almond meal or pepitas/sunflowers ground up for nut free version
-1 tbsp. cinnamon
-2 tbsp. melted coconut oil
Optional: decorate with nuts or seeds
How to:
Preheat oven to 170C. Line a baking sheet with baking paper.
Mash bananas with a fork in a bowl. Add all other ingredients and mix or blend all ingredients for a few seconds in a food processor/thermomix. Form into cookie shapes and place on baking paper. Decorate if desired. Bake for 35-40 mins until they are firm and not too gooey. Enjoy!
Makes 12 medium sized cookies.
For chocolate cookies, add 2 tbsp. of raw cacao powder.
